Cory Eakins

Cory Eakins joined Baylor Athletics in July of 2022 as an Associate Director of Performance Nutrition, working with the volleyball and men's and women's basketball programs.

Prior to the move to Waco, Eakins worked for Aramark at Western Kentucky University as an Nutrition Associate Manager, from July 2021 to July 2022. He managed both Hilltopper Nutrition and WKU Sports Nutrition programs. He was tasked with overseeing a full-time Assistant Dietitian position, six paid nutrition student staff, unpaid volunteers, and dietetic interns as well as managed the department Twitter account. He worked with men’s basketball for 2021-22 season. He educated student-athletes on performance nutrition, attended practices, walk-throughs, home games, and traveled with the team at the end of season including Conference USA tournament. Eakins developed fueling plans for student athletes with body composition goals, and implemented hydration protocols for high-risk student athletes. He provided pre-game meal recommendations, pre-game snacks and hydration, and fuel at half time. Eakins oversaw the Campus Dietitian who promotes health and wellness across WKU community through advertisements, promotional events, social media, and sampling events. He implemented a new menu in allergen station and new menu items in main dining facility. 

Eakins worked for Aramark at WKU as a Nutrition Coordinator from May of 2019 to July of 2021. He produced a WKU Sports Nutrition cookbook – the first of its kind at WKU. He performed team talks, make recovery shakes, and provide snacks before/after practices and games for various teams, including volleyball for the NCAA tournament and women's basketball for the C-USA Tournament. He performed grocery store tours, tour of main dining facility with WKU football team and cheerleading. Eakins prepared a WKU Sports Nutrition proposal for WKU Athletic Administration to review in attempt to create a FT sports dietitian position at WKU in February 2020. 

From August of 2018 to 2019, Eakins was the Vice President of MNT, Inc., doing one-on-one nutrition counseling, created and executed a wellness program for a local business, performed food safety and sanitation audits for LTC facilities, performed medical documentation and assessments for LTC facilities, performed marketing duties to expand community awareness of business, managed seven LTC facilities along with five registered dietitians that serve in those facilities, participated as a dietetic internship preceptor for Western Kentucky University, facilitated placement for other interns to their preceptors, interviewed and hired employees for the business, coordinated with LTC administrators to solve problems with facility assessments and resident care, established relationships with physicians in order to create a interdisciplinary approach to patient health.

From September of 2016 to 2018, he was a dietician at the Western Kentucky Veterans Center. There, he completed nutritional assessments, prescribed therapeutic diet plans, consulted with other health care professionals for resident’s medical nutrition therapy, attended interdisciplinary meetings, maintained stock of supplements for facility, ensured that the foodservice department was in compliance with regulations.

With the Hopkins County Health Department as a MNT Nutritionist, he assessed nutritional status of individuals and developed a nutrition plan for each individual according to the WIC program from August of 2015 to Sept. of 2016.

Eakins is originally from Madisonville, Kentucky, and is married to Courtney Eakins. The couple have one daughter, Hadley.
